I launched Lilibets in 2008 when I opened a French pâtisserie on Stanley Street, Southport (now the stylish bakery for our tea rooms and home of our Masterclasses). In 2016, I expanded onto Lord Street into a shop which is very close to my heart as it was built by my Great Grandfather in the late 19th century. I had had my heart set on this shop for a while and after 4 years of saving as much as I could, I relocated to 417 Lord Street which is where you can now find Lilibets Tea Rooms.
Baking is a huge part of my life and since I was 3 years old, I have always enjoyed baking. At an early age, this love for baking was instilled into me by my lovely Mum who is a great baker. I went on to compete in Junior Masterchef at the age of 13; at secondary school, French, Home Economics and Politics & Government were my favourite subjects. Ultimately, this took me to follow a degree course of French and Politics which led to me living and working in Paris where I worked for a prestigious international law firm as a bilingual legal secretary. I spent a lot of my free time baking in my kitchen for my colleagues and I very quickly became known as ‘The Cake Fairy’. During my time in the Parisian office overlooking the Champs-Elysees, the idea for Lilibets was born. I had quite simply fallen in love with baking and I was lucky enough to be accepted to study pâtisserie at the prestigious French culinary school, Le Cordon Bleu. From the very first class which I had there, I knew that this was meant to be; I simply loved my time at LCB and was delighted to come 2nd out of a class of 70.
Since opening in 2008, I have achieved various accolades from supplying Fortnum and Mason in London to being a finalist in Best Tea Room in Lancashire and Cumbria in 2017.
I absolutely love (and take great pride in) making people feel welcome in our tea rooms and ensuring that every single aspect and minute detail is perfect. I spend a lot of time sourcing the perfect ingredients as well as making sure that everyone in the tea rooms understands the importance of providing an exceptional level of customer service for which I am very particular (some would say fussy but I am just a perfectionist at heart!)
I am incredibly lucky to have what can only be described as a truly fabulous team behind me both in the bakery and front of house, not to mention a very supportive family and husband (who keeps me going when I’m working hard with endless cups of Earl Grey!).
I genuinely love what I do and I hope when you visit the tea rooms that you have as much pleasure out of it as I enjoy putting into it.
